Date Syrup

Attention, diabetics: It's time to add dates to your shopping list. Foods with a high glycemic index, which is ranked from 1 to 100, will make blood sugar rise quickly.

 

Ingredients:

I use a liqueur bottle to store mine - keeps them guessing LOL

8-9 Medjool dates

1 1/4 cup Filtered water (or reverse osmosis etc.)

1 tsp. Vanilla extract

 

Instructions:

  • Cover dates with warm filtered water and soak for 30 minutes

  • Drain water from dates – saving 1 1/4 cups for recipe

  • Place dates, water and vanilla extract into blender or food processor

  • Blend until smooth

Store in air tight glass container – refrigerate – up to 2 weeks
